Lilly Su's Cornish Hens With Pecan Stuffing:

Ingredients:
1 14 oz can of chicken broth
4  green onions, sliced
1/2 cup chopped pecans
1/2 cup golden raisins
4 cup stuffing
3 Cornish game hens, halved (about 1 1/2 lbs each)
1/2 cup peach preserves
1 TB  Dijon mustard

Instructions:
Serves 6
Preheat oven to 350

Mix broth and onions in saucepan.  Heat to a boil.  Stir in pecans and raisins. 
Remove from heat and add stuffing, mixing lightly.
Spoon stuffing across center of a greased 3 qt shallow baking dish, leaving space on both sides for the hens. 
Arrange hens on each side of the stuffing.  Mix preserves and mustard and spoon over the hens.

Bake at 350 for 1 hour or until done.  When stuffing is golden brown, cover loosely with foil to keep it from drying out.
Stir glaze and spoon over hens before serving.
