Rena Yeomans' Cream Cheese Roll-Ups: Ingredients:
2 - 8oz bars of cream cheese
1 egg yolk
1 tsp pure vanilla
2 loaves white bread, crusts removed
1/2 lb butter, melted (2 sticks)
1/2 cup sugar
2 tsp cinnamon
Instructions:
Beat cream cheese, egg yolk, and vanilla until smooth.
Roll each bread slice flat. Spread each with cream cheese mixture.
Roll up and slice each roll into 3 or 4 pieces.
Dip each piece into one-half pound of butter, melted and then in a mixture of one-half cup
sugar and 2 tsp. cinnamon.
Bake at 350 degrees for 10-15 minutes.
Notes:
Can make ahead and freeze.
Suggest Orowheat Buttertop white bread.
It works to half the recipe (using the whole egg yolk), if you don't need a large
quantity.
