Luscious Key Lime Cake: Ingredients:
Cake:
1 pkg Duncan Hines Moist Deluxe Lemon Supreme Cake Mix
1 pkg lemon instant pudding and pie filling mix (4-serving size)
4 eggs
1 cup vegetable oil
3/4 cup water
1/4 cup key lime juice
Glaze:
2 cups Confectioners sugar
1/3 cup key lime juice
2 tbsp water
2 tbsp butter or margarine, melted
Garnish:
Confectioners sugar
lime slices
Instructions:
Preheat oven to 350 degrees. Grease and flour 10-inch Bundt pan.
For cake, combine cake mix, pudding mix, eggs, oil, water, and 1/4 cup key lime juice in
large bowl.
Beat at low speed with electric mixer until moistened.
Beat at medium speed for 2 minutes. Pour into Bundt pan.
Bake at 350 degrees for 50-60 minutes, or until toothpick inserted in the center comes out
clean.
Cool in the pan for 25 minutes.
Remove cake from the pan onto cooling rack. Cool for 5 minutes.
Return cake to Bundt pan.
Using a long-tined fork or toothpick, poke holes in the top of the cake.
For glaze, combine 2 cups confectioners sugar, key lime juice, water, and melted butter
in medium bowl.
Pour very slowly over top of warm cake, so that it flows into the holes.
Cool completely.
Invert onto a serving plate.
Just before serving, dust with additional confectioners sugar and garnish with fresh lime
slices.
Makes 12-16 servings. Serve with lemonade and cookies, and enjoy!
