Jane Ward's Individual Lime Cheesecakes:

Ingredients:
12 vanilla wafers
3/4 cup low-fat cottage cheese
1 8-ounce package Neufchatel cheese, softened
1/3 cup plus 2 tablespoons sugar
2 eggs
1 tablespoon grated lime rind
1 tablespoon lime juice
1 teaspoon vanilla extract
1/4 cup vanilla low-fat yogurt
Kiwifruit or strawberries or any fresh fruit for the top

Instructions:
1. Line 12 muffin pans with paper baking liners. Place 1 vanilla wafer in
the bottom of each liner. Pre-heat oven to 350° .
2. Place cottage cheese in container of blender or food processor, process
until smooth.
3. Combine Neufchatel and cottage cheese in medium bowl. Beat with electric
mixer at medium speed until creamy.
4. Gradually add sugar, mix well.
5. Add eggs, lime rind, lime juice, and vanilla. Beat until smooth. Spoon
cheese mixture evenly over vanilla wafers.
6. Bake at 350° for 20 minutes or until cheesecakes are almost set. Do not
over bake.
7. Let cheesecakes cool completely. Remove from pan (but NOT from paper
liners).
8. Refrigerate.
9. When ready to serve: Spread vanilla yogurt evenly over the cheesecakes
and top with the fruit you have chosen.

This recipe yields 12 servings at about 132 calories per serving.
