Connie Goddard's Planked Wild Salmon:

Ingredients:
1 untreated cedar plank large enough to hold the fish
2-1/2 lb. fresh salmon fillet, boned with skin on
2 T. olive oil or melted butter
Coarse sea salt and freshly ground pepper to taste
5 large sprigs fresh thyme

Instructions:
Soak the plank for at least an hour, weighing it down to keep it submerged.
Heat the grill. Brush the fillet on both sides with olive oil, and season with salt and pepper.
Remove the plank from the water and spread the thyme springs on top of it.
Place the salmon skin side down on the bed of thyme and place on the grill.
Cover and cook for about 30 minutes or until the fish is cooked and the center is still just a little bit rare.

If the board catches fire, spritz it with water from a spray bottle to put out the flames. The smoldering cedar will give off an intoxicating aroma and attract every cat in the neighborhood. Do not overcook to avoid drying out the salmon.

Cut the fish into six servings and serve directly from the plank.  Serves 6.
