Pumpkin Cake Bars: Ingredients:
2 cups sugar
2 cups all-purpose flour
2 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
2 tsp. ground cinnamon
3/4 cup corn oil
1 15-oz. can of pumpkin puree
4 eggs
1/2 cup pecans, chopped
powdered sugar
Instructions:
Combine sugar, flour, baking powder, baking soda, salt and cinnamon. Add oil,
pumpkin and eggs. Beat 1 minute at medium speed. Mix in pecans. Spoon
batter into a greased 15x10x1-inch pan. Bake at 350 degrees for 20-25 minutes.
Cool completely. Sprinkle with powdered sugar. Cut into deltas (or
regular bars).
