| Jane Ward's Scallops Wrapped with Smoked
Salmon: Ingredients:
Large FRESH Scallops - about 2 to 3 per person
Smoked Salmon - thinly sliced - enough to wrap around the edges of the scallops
Wooden Skewers
Extra Virgin Olive Oil (Better known as EVOO)
Instructions:
Soak Skewers in water about 10 minutes (so they won't burn)
Wrap Smoked Salmon slices around the edge of the scallops
Secure the wrap-around with a skewer
Rub a little bit of EVOO (Extra Virgin Olive Oil) on each side of the scallops to avoid
sticking to the grill
Cook over hot grill (indoor or outdoor) or under broiler (High) about 3 minutes
per side
Enjoy with Lemon slices, grilled veggies or green salad, and French bread
