Marji Karlgaard's Sweet Potato Bake:

Ingredients:

3 lbs sweet potatoes (dark orange) quartered, boiled and peeled. (In a hurry?, use 3 cans sweet potatoes or yams)
1/4 cup butter, softened
1/4 cup orange juice and zest of orange peel
2-3 Tbls of maple syrup (to taste)
1 tsp powdered ginger
1/4 tsp nutmeg
1/4 tsp cinnamon
Salt and pepper to taste
1 cup chopped pecans

Instructions:
Mash cooked potatoes with OJ and butter, add syrup, spices and salt/pepper.
Stir in pecans (reserve 2 Tbls for top of dish.)
Transfer to cassarole or souffle dish and heat in oven  at 350 degrees for 45-60 min.
Sprinkle on reserved nuts.
