| Back to the San Jose Recipe Collection | Dorothy Reinke's TriColor Macaroni Salad: Ingredients: 2 Cup colored macaroni (e.g., bow) 1/2 Cup Miracle Whip 1 tsp. seasoned salt dash pepper 1 tsp. dry onion 1/4 Cup sweet pickle relish 1 tsp Dijon mustard 1 tsp vinegar (apple or wine) 1 Tb. chopped parsley 1 Tb. chopped chives 1 Cup chopped celery 1 Cup diced ham (OR 1 can tuna drained, OR 1 small can boneless salmon drained) Instructions: Cook macaroni, drain, rinse with cold water. Mix salad dressing and seasoning and add. Add celery, and ham or fish. Gently stir in parsley and chives. Refrigerate. Taste and add more seasoning to taste. Turn into serving bowl and garnish with parsley. Refrigerate until ready to eat. Yield 6 cups. |
